Floating islands.

Floating on cloud 9 and on meringues too. Best thing I've ever baked!! Super proud. 

Have you ever poached meringues?? It tastes amazing!! Today we made floating islands at culinary school. We even made custard (obviously it's not called floating islands for nothing) today was the first time I had ever made custard and I must say I was proud of myself because the consistency was perfect and it wasn't too sweet, it was just right!! I got full marks.  It wasn't any powdered nonsense that some places serve you. I never thought I'd basically eat raw egg whites (well poached in cream for 4 mins on each side - but I did and i really did enjoy it and who wouldn't eat all the custard they made? It was to good to be true. Loving my experience at Cullinary school!! Should I post the recipe for you? Comment below and let me know!! 

Tonight we went for sushi and guess what? They brought those big black dustbins into the reasturant while we were eating and it was Infront of the kitchen. I was disappointed as I normally go there often! I think that was my last night there. Learning about kitchen hygiene has taught me so much!! I have become so concious about what I see and where I eat my foods now a days - it's a good thing thought! Thanks to Capsicum I have learnt a lot and there's so much more to learn!

Cook, bake, study repeat ..

Hello bloggers. 

Today I didn't attend culinary school as I was feeling really sick and I wouldn't want to work in the kitchen being sick and make everyone else sick as well. 

Since I was basically home alone I decided to cook a lovely chicken dish - I found this recipe and it's really yumm!! It's called chicken a la Monique? Nothing special I guess or popular/well known. 

I'm studying today because I found out our test has now moved to tomorrow instead of friday.. So I've been studying all day at least!

Seocnd time in the kitchen at culinary school!!

Today, we baked. We baked till we dropped, my back got sore, we washed so many dishes but I love it! 

I learnt a lot today, we made poached egg, and poached a pear. We also made a walnut brittle and a chocolate ganache to go well with it! Oh yes, before I forget - we also did some sugar craft for the first time! Many of these students are experienced in many things in the kitchen! I'm still learning.

Decedent chocolate cake.

I had an order on Monday for this KitKat cake from an lovely old lady and she is the sweetest thing ever. She actually ordered it for her daughter, Tina for her 50th birthday. I loved making this cake! Being a chef and trying to stay in shape and skinny is hard work!! Everyday I get to make delicious treats which I have to taste to see if it's perfect or not!

Peppermint marshmallow skies.

recently made the most devine chocolate peppermint marshmallow oreo slab! 

I made it for my classmates at capcisum! Everyone loved it! Personally, I don't enjoy peppermint but in this slab I made - it was amazing!!

GIANT KITKAT CAKE!!!!

This is by far my favorite cake that I've ever made!! I won't lie, It took about 5 hours due to the lack of the oven useage - we only used one oven for a 5 layerd cake and cooked one cake at a time! 

Thank goodness for help that day! 
This cake is pretty expensive as you can see - we have ferror rocher chocolate with kit kats AND whispers!! 

Everyone told me how lovely the cake not only looked but tasted too!! Which obviously is the most important part, ofcourse appearance matters but taste matters more!! 

This cake was a mixture of chocolate, red velvet and blue velvet! Yummy xx 
And the blue icing as they had requested.

I really do love baking. It's the passion and creativity that really drives me to be the best I can possibly be. 

The way I pipe, the way in which one decorates a plain muffin into a gorgeous pretty cupcakes. 

These purple cupcakes below are really cute - I made them for the start of Spring in 2014 - last year. I love the way this purple icing was piped. I love these cute little flowers and beautiful butterflies. I also really love those polka dotted cupcake holders, the cupcakes fit so perfectly.

Welcome to my home.

Welcome to my country home. Www.viverevenue.co.za. 

Bloggers, welcome to Vivere. We do infact, have a wedding and conference venue. I will also be doing an events course - I will follow my dreams of opening my beautifull restaurant at our gorgeous Vivere, as well as becoming an events coordinator which is another carrer path of mine. I got the jackpot!! Two in one!! Double Wammy!! Wam -Bam-Thank-You-Mam. 

I really do dream about my gorgeous restaurant amongst the beautiful trees and the nature, over looking the gorgeous view of our zebras reflection in the damn and all the beautiful animals where the warm sun lies and so do my tables with gorgeous elegant French provincial table cloths and napkins! Can you feel the tranquility ? And of course all my platters of meats like prosciutto, Parma ham, olives,sun dried tomatoes, feta and sticky ribs being served on chopping boards and a tea garden filled with fairy lights and gorgeous candles lights hanging from trees.

 I cannot contain my excitement. I have so many ideas and thoughts my head could crack open like a jar of sweets and burst with bright & colourful ideas!! 

While on the other hand, doing kitchen teas and gorgeous baby showers and conferences and nothing but the look and feel of love in the brides eyes when they say 'I do' and take their first steps as husband and wife. 

I might dream big! But it's all going to come true because if you want your dreams to come true you have to make them real!! I'm ready to start this chapter of my life - I've been ready for a while now.

Life of a chef.

Being passionate about something is not always easy but that's what elevates it from being merely a hobby.

 Recently I've heard many people that speak of being a chef or studying to be one and that it is really easy 'oh you just bake and wash dishes all day, you just have to learn your recipes.' well it's not. It's more than just being a cook or a baker in the kitchen it's about the safety of where and how your food is cooked and prepared, it's about each little detail they go into by putting that beautiful decor on the plate, baking is an art, but all art requires knowing something about the techniques and the materials. 

We learn how to assist those who have been injured, how to take care of them, How to handle a situation where you are in a fire and have to learn the evacuation process in order to get out of the building and to make sure that everyone is okay and that no one is in danger and on fire and out of the kitchen/restaurant. It's about having fresh ingredients that are stored in the correct temperatures, about having to use the correct color chopping boards for the different kinds of foods In order to ensure that your food is cooked to perfection without any faults and with the best hygiene. 

We learn about food poisoning and every type that you get and how to prevents these types of food poisoning, we have to teach people the correct ways of opening a restaurant  and having the correct equipment, hygiene, how to store things especially products like chemicals correctly, it's not easy but in the end I actually love all of this. It's my passion and my future and I will strive to do the best of my ability to earn the respect that those celebrity chefs have earned. One day I will be famous. I will be well known for what I do and for the effort and hard work I put into my dishes.

Hello bloggers.

I know I promised to post photos of my lunch today, buuuut Ive been so busy up until my last post which was right before I left for college. 

I'm so exhausted. We are busy learning first aid and safety at work and in the kitchen. We have four assignments due for Friday! That means less time to blog, just kidding ;). Today we had to practice CPR and learn how to save a life! And we also learnt how to bandage up a wounded person. Was so much fun!! But all my assignments will keep me busy as I want to try finish them tonight. 

I really need to get back to work now, I will post photos later on but for now I will leave you with a photo of me in my chef uniform! Not the whole uniform but most of it.

Pizza lovers.

Don't we just all love pizza?
Perfectly cooked pizza with your favorite toppings and maybe a little sausage crust ?
Pineapple, prosciutto, rocket and delicious artichokes with olives? Sound good?

Pizza is happiness.

They say 'you are what you eat, so I am pizza'. 

A few weekends ago, I spent one sunday just making pizza. I had made chicken mayonnaise pizza, pizza with a tomato base, ham, cheese (mozzarella and cheddar), peppers and olives. I also made loads of cheese rolls since i had left over dough from the pizza. 

I must say - cooking might not be my thing, but I LOVE making pizza.

My two layered Turkish delight cake, so delicious! I love the rose in the middle!! I made this cake for a coffee shop that I supply with most of my delicious cakes!!  inlove with the rose infused sponge and I'm obsessed with the Turkish delight pieces ontop of the cake!! Makes you want to pick them all off!!

Hi Bloggers!

This is my first post, I guess I should introduce myself.. My name is Penelope Citton (plop for short) Im a fun loving girl and I love to meet new people everyday!! I was born on April 19 1995. My favorite color is purple, I have a passion for baking and I love to be creative and come up with new ideas for cakes and cupcakes. I supply some shops in the Pretoria area with my cakes and Ive been baking for about 2 years now. I will also be doing a part time events course this year - I also want to become an events coordinator at our gorgeous venue in Pretoria called Vivere - www.viverevenue.co.za
 

Ive decided to start a blog as I have started College and I was told I needed to start a blog in order to get my name out there and share all my photos and get some exposer :D
